If you drove stright through without stopping for any sighseeing etc I think it might get done in 5 days if you stop often for the sights it will be more like 8 days. Car and Driver magazine did a story on the ring road trip a couple years ago. They said you may need a car with 4wd.

Iceland is beautiful but small. Norway is probably better. Don’t forgte to try reindeer venison in norway it tastes like the best beef you have ever had.

If you leave out the west, you know instead of driving from Reykjavik to Ísafjörður and just go from Reykjavik to Akureyri which I thing you mean, takes around 5 hours with regular stops. To drive from Akureyri to Höfn takes also around 5 hours, and from Höfn to Reykjavik takes also around 5 hours. Give or take one hour or two. So without sightseeing it should take around 15 hours. If you include sightseeing I would say 3 days tops. But you of course can be longer it depends on how slow you want to take it.
But if you include the west, Ísafjörður and all that. It would take 2 or three more days.
